Bring the 2 C. Water and 2 C. Beans to a boil in a large pot. Reduce to medium and cook for 10 minutes. Drain well in a colander.

Step 2

Put the beans back in your pot. Put in the vegetarian chicken broth and bring to a boil. Put on a lid and let simmer on low for 1 1/2 hours.

Step 3

Cook up the onions and garlic in a non stick pan with a tiny bit of olive oil for about 5 minutes stirring often. Put this mixture in with the beans. Add the carrots, cumin, chili powder, and orange juice. Cook on low for 45 minutes.

Step 4

Let cool for about 15 minutes. Pour all or a little at a time in a food processor and run for 15 - 30 seconds on medium. Depending how smooth you prefer it. Stir in cilantro and serve sour cream on top if you wish.



Things You'll Need:

* 2 C. Black Beans, Raw
* 2 C. Water
* 8 C. Water Mixed with 4 heaping t. of Vegetarian Chicken Stock
* 3 stalks of green onions, minced
* 3 cloves garlic, minced
* 1 t. chili powder
* 2 t. cumin powder
* 2 carrots, minced
* 1/2 C. orange juice
* 1/2 C. fresh cilantro
* Optional Sour cream

This looks like a great soup. It sounds like it would taste great. It is nice to see that it would be good for your also. Do you have any other good soups?
